Although I’m still totally in love with Gay Lea Smooth Cottage Cheese, because I don’t like any lumps and bumps, Derek on the other hand, likes the texture of the original Gay Lea Nordica Cottage Cheese. He’s been putting it on everything, but lately, he’s had an addiction to avocado toast with cottage cheese. It’s a healthy way to start the day, yet still tastes incredibly yummy.
Derek and I are not ones to stick to a New Year’s resolution, but we have been trying to eat a little healthier this year. Gay Lea Nordica Cottage Cheese has so many health and nutritional benefits that we’ve tried to incorporate it into more meals. Since it’s made from 100% Canadian dairy milk, that’s high in protein and low in fat, it is an excellent item to include into your daily routine.
Avocado toast with cottage cheese and tomatoes couldn’t be simpler to make, it’s the perfect quick, no-cook meal for someone who gets up as early as Derek. It’s full of protein, calcium and other vitamins and nutrients, making it a well-rounded meal. Simply take a few slices of bread, top each slice with ¼ cup of Gay Lea Nordica Cottage Cheese, then mashed avocado, followed by a few thin slices of tomato, and salt and pepper to taste.
